We are really excited to bring together three fantastic Sussex producers to create this convenient, delicious meal for two. Perfect for a quick weeknight dinner, or a Friday evening treat, it's the best Italian flavours, brought together in one meal made in our very own Sussex.
- 250g fresh egg & spinach fettucine
- 150g jar of Ouse Valley Red Pepper, Basil & Tomato Pesto
- 150g of Twineham Grange Italian-Style Hard Cheese
Caccia & Tails, in Lewes, provide the pasta - 250g of fresh egg & spinach fettucine. Owned by Elisa, who has Italian and New York parents, the pasta is handmade fresh for each order. Fettucine is a long, flattish noodle-shaped pasta, similar to tagliatelle. A perfect pasta to serve with oil or butter-based sauces, as the sauce goes a long way, coats the pasta evenly and also helps to prevent the strands of pasta from clumping together.
The pesto is made by Ouse Valley Foods, and is a robust and delicious sauce made from roasted red peppers, sun dried tomatoes and fresh basil. Zingy, with a deep flavour, it's the perfect partner for the pasta.
Finally, Twineham Grange is grated over the top - a medium-fat hard cheese from the makers of Sussex Charmer and the only vegetarian hard cheese to ever be produced in England. Made from pasturised cows milk and matured for 15 months, it's the perfect finishing touch.
